The Famous Rainbow Cake

Serves 8
Ingredients
Genovese sponge cakes (6 sponge cakes, each made with 250 grams of dough)
6 eggs
400 g sugar
400 g flour
200 g melted butter
1 packet baking powder
1 packet vanilla sugar
100 g shredded coconut (optional)
1 teaspoon baking powder
20 cl light or heavy liquid cream
10 cl milk
Natural or artificial food coloring (preferably in powder or liquid form)
White chocolate ganache
500 g mascarpone
400 g white baking chocolate
Whipped cream
50 cl very cold heavy cream
100 g powdered sugar
The recipe
Make colored sponge cakes
Beat the eggs with the sugar until very frothy. Add the melted butter and mix.
Add the vanilla sugar, baking powder, two teaspoons of baking soda, and then the flour. Mix well until smooth.
Add the cream, shredded coconut, and milk, and mix.
Weigh the batter and divide it into 6 equal parts to make 6 small sponge cakes (about 250 grams per cake).
Take the first portion of dough for the first sponge cake and mix in 3 drops of food coloring. Pour the batter into a square cake pan and bake for 10 minutes at 180°C.
Repeat this five more times, changing the color each time, so that you end up with six sponge cakes. If possible, bake them in pairs to save time!
Make the white chocolate ganache
Whip the mascarpone and add the cooled melted white chocolate. Whip for a few minutes until you have a glaze.
Take the first sponge cake and spread a layer of glaze on top. Cover this first sponge cake with the second one and spread another layer of glaze on top. Repeat this until all six sponge cakes are stacked on top of each other, with a layer of glaze between each one. Smooth the top and sides well. Store in a cool place.

Make the whipped cream
Pour the cream into a very cold bowl and whip it, adding the powdered sugar until you have thick whipped cream.
Cover the rainbow cake with the whipped cream and smooth it out well. Sprinkle with shredded coconut (optional) and serve!
